Directions

Slice fennel and leek with a Benriner Japanese-Blade Mandolin. The texture is everything in this salad, so thinner slices are essential to creating a pleasant bite that isn’t too rough or chewy (which can be an issue with fennel).

Combine ingredients for the dressing together in a Pyrex® mixing bowl.

Arrange vegetable slices in shallow serving dish, pour dressing over, and gently mix with your hands. Add fresh mint and either grapefruit segments or watermelon radishes (sliced thinly with Benriner Japanese-Blade Mandolin).

Complete with a sprinkling of Urfa biber pepper and microgreens. This salad is a work of art!

Ingredients

  • 4 bulbs of fennel
  • 1 leek
  • 1 bunch fresh mint
  • 1 -2 fresh pink grapefruits segmented or watermelon radishes sliced
  • 2 tbsp. of any fresh microgreens
  • Pinch of Spice Way Urfa biber pepper

Tips

Use a shallow dish rather than a salad bowl as it looks more beautiful and is easier to serve.

Ingredients: Blood oranges is another option instead of pink grapefruits or watermelon radishes.
